Sunday time is special, who wants to spend it all meal prepping? Not this gal. 🙅🏼‍♀️ . Instead, I stick to a 30 minute prep routine that is fool proof. 👇🏻 . 👉🏻Wash greens, stock up on frozen berries + easy fruit to throw in a smoothie, like bananas. 👉🏻A quick lunch base— In a large pan, sauté some garlic/onions in avocado oil w/ a veggie or two (I did chard stems and celery today because it’s what I had left). Add lentils or a whole grain to the pot with bone broth or water in a 1:2 ratio. Add herbs if you’re feelin it, bring to a boil, then top with a lid and simmer until tender and water is absorbed. Toward the end, throw in some greens and cook until wilted. Top with your fave toppings (I did pomegranate seeds and cucumbers this week but seeds, cheese, fave raw veg is good), s&p! 👉🏻 Grab a protein you like- wild caught smoked salmon, hard boiled eggs, tempeh, etc. . . I’ve got breakfast smoothies and lunch for the week ready to go! . Tonight I’ll make a quick sweet potato enchilada thingy that will be good for the next few nights and we are covered. . (The second half of our week has a few dinners out so I planned accordingly with my meal prep cause #nowastedfood is where it’s at.) . Does this feel doable for your prep?
