VEGAN RAINBOW CHEESECAKE - Would you like to take a slice? ;) Recipe and video created by @thetastyk Follow @veganviralofficial for more recipe inspiration. INGREDIENTS Crust: - 1 cup Medjool dates, pitted (alternatively you could use dried figs) - 1½ cup raw walnuts (or half-half oats/almonds/coconut) - 1 pinch of sea salt Filling: - 3 cups raw cashews, soaked for min. 6 hours - 1 cup coconut butter, melted - 1 (15oz) can full-fat coconut milk (make sure it's at room temperature or it will harden up the coconut butter) - 1 cup water - juice and zest of 1 organic lemon/lime - ¾ cup maple syrup - 1 Tbsp vanilla extract or vanilla powder Color Layers: - 1 tsp berrylicious blend - 1 tsp ocean blend - 1 tsp alkalizing blend - 1 tsp tropicana blend - 1 tsp pink pitaya INSTRUCTIONS 1. Line the bottom of a 20cm round cake tin with parchment paper. 2. Add all your crust ingredients into a food processor/high speed blender and pulse until you get a sticky dough. Place the dough into the cake tin and use your fingers to press down evenly. Place into the freezer to chill. 3. For the filling simply add all ingredients to a high speed blender. Blend on high for 60 seconds until completely smooth. Divide the filling equally into 6 different bowls. Add about 1 tsp of the 5 UnicornSuperfood blend to each bowl and blend each layer separately (make sure to clean your jug in between). 4. Pour the first layer onto the crust and use a spoon to even out the filling. Place into the freezer for min. 30 minutes until firm and repeat this step with all the other layers. Finish with a final white cream layer and add some colorful sprinkles/colored desiccated coconut/other decorations on top and freeze for another 3-4 hours. 5. Back in San Diego & whipped up this stock of medicine for my client who recently had surgery. It’s no top notch food photography or bougie dinner party but these jars have over 75 plants in them and will be the bridge of healing for her. Golden milk, green juice, Ayurvedic lentil soup, cacao chia pudding were all on the menu to name a few! My early career was filled with fine dining, pushing out plates and catering for the rich & famous. What at first felt like a dream job/business, quickly made my own illness worse and left me feeling without much purpose. I didn’t connect to cooking in that way, it was just the way everyone told me I should connect to it. Now, I know that THIS is how I can use my skill set to make a difference for people who really need it. This is the difference between life and death. Sickness and health. Scarcity and abundance. I am never sad to come home from a trip because I know that there’s is so much need for this in our world right now and home is where I can really show up. On a side note swipe 👉🏼 to see an entire blender full of golden milk EVERYWHERE. The blender actually exploded on me. Another reminder to not take life too seriously & to just keep on movin. I can’t even believe thanksgiving is already next week! The festivities began a bit early this year with a freindsgiving hosted by @charlottesyoga_ last night. There were so many tasty dishes there but my contribution was these Balsamic Brussels. Heres how you make them: 1. Start by halving 2 lbs of brussel sprouts and chopping 4 cloves of garlic. 2. Heat up 2 tbsp of oil in a large skillet over medium high heat and add place the Brussels in cut side down. Cook for about 5 min until they have turned crispy and golden brown. 3. Flip the brussel sprouts, add the garlic and cook another 1-2 minutes. 4. Add 1/4 cup dried cranberries to the mixture then CAREFULLY pour 1/3 cup water into the pan and cover with a lid. Let steam for 2-3 minutes. 5. Remove the lid and add 1/4 cup balsamic, stir well to coat. Season well with a generous amount of salt and pepper. 6. Pour the mixture into a greased baking dish and top with 1/2 cup bread crumbs, 1/4 cup parmesan and 1.5 tbsp butter divided into small pieces and spread over top. Pop under the broiler for 1-2 min or until golden brown. Voila, an easy festive side dish to bring to your holiday parties this year.

PSA:🥤 juice is NOT NEEDED for infants and children!!!! . . Yes, I said juice is NOT NEEDED. This has been coming up a lot in my clinics lately for both infants and children that I wanted to take a moment to discuss. . . Before 1 yr of age infants should only be consuming breast milk and formula until 1 yr of age. Water can be introduced for practice in an open cup or straw cup at 6 months of age with meals for up to 4-8 oz per day. . . Children 1-2 yrs of age the recommendation is NO juice. Just water, breast milk, whole milk or milk alternative. . . Over the age of 2 yrs of age, technically speaking children can include fruit juice if 100% but it must be limited to 4-6 oz per day. . Technically over 2 yrs of age 100% fruit juice is allowed in small quantities. While this is technically allowed it definitely is NOT NEEDED. . . Juice is a source of added sugar, regardless if coming from 100% fruit juice. . . This also applies to other sugar sweetened beverages as well. I see first hand the negative side effects of juice in children’s diets and I strongly encourage limiting to not including at all if possible. . While juice is tasty and fun to drink it is certainly NOT NEEDED. . . . Some medical indications: Juice before 1 yr of age: 1-2 oz per day as prescribed by your PMD has helped with constipation. And certainly using 1/2 oz of juice in the context of low blood sugar for a person with diabetes is critical. Yes, a tiny bit of juice splashed into your child’s water during sickness to help with hydration is okay. So yes there are exceptions to the rule. However, for the most part infants and children do not need juice.

#repost from the wonderful @moodymadeyefoodie : It’s that time of year again where life becomes extra hectic and my body always reminds to slow down whether I want to or not. So here I present to you another “breakfast for two or breakfast for you” cause every day is different and your appetite will be too. Today my bf & I had a pile of dirty dishes in the sink & so we split this plate and ate it with our hands and it was a disaster lol. Sometimes life be dat way tho and I’ll never complain because look at this SPREAD. 2 of my last farmers market eggs cooked just the way I’ll eat them (the yolk must cook slightly and u can tell when u see lil bubbles forming). Bae always wants bacon so I cooked up some @changinwaysfarm bacon and in the oven they cook down to little strips that are perfectly dippable with all the goodies on the rest of the plate. Some of my last @redbeardfarms crispy collards, @terra.vita.farm sunflower shoots and fermented sauerkraut (the spicy one with @humblerootsfarm jalapeños & @redbeardfarms cabbage). Also threw a mini handful of my lentil sprouts that I made a few days ago and hoping my bf thinks it’s just some type of green (he “hates” lentils). Today I’m grateful for breakfasts like these that can be thrown together & provide us both with fuel and nutrients all while supporting the best peeps at one of my homes away from home (@thewilmingtonfarmersmarket). I can’t even explain how delicious this was . It was 5 ingredients took 20 minutes to make and was AMAZING , vegan , gluten free , and lowfodmap diet approved 🙌🏻🙌🏻 . . Recipe ⬇️ be sure to tag me when you make it ! . . 3 vegan sausage links ( I used beyond meat brand from @wegmans ) baked for 20 minutes at 350 . 3 cups of cooked brown rice noodles . 3/4 can of fire roasted tomatoes . 1/2 a pack of frozen spinach ( heated in the microwave) seasoned with adobo . 1/2 a jar of @raoshomemade marinara sauce ( sensitive recipe) . . Once everything is cooked , throw it in a pan together ! Atonement Monday! Here’s a colorful bowl full of good—chicken pho (Vietnamese chicken noodle soup). I simmer chicken bones (along with herbs and spices) for two whole days to suck out every bit of the vitamins and minerals from them for the pho broth. And, psst ... see those noodles? They aren’t rice noodles, they’re shirataki noodles. Yup made from tofu. The pho is also packed with bean sprouts, carrots, pea pods, mushrooms, baby bok choy, radishes, mint, cilantro, red chili peppers green onions and chicken. Broccoli- it’s everywhere right now and especially at my Farmer’s Market. Most people only use the florets or the tops. But, if you do that, you’re missing one of the best parts! Those thick stems that usually end up in the trash? If you treat them right, they are so very sweet and tender. Just peel the stems, cut or slice them and cook them with the florets. You won’t believe how much you will love them!

Quick Tuna Salad weekday lunch 🥗Prepped a couple Tupperware bowls with arugula, chopped bell pepper, and tomatoes last night. So all I had to do when I got home was mix 2oz of @wildplanetfoods albacore tuna 1 tbsp @primalkitchenfoods mayo and a hard boiled egg together then dress the whole salad with olive oil, pepper, and a squeeze of lemon. . ⁣2 years, 70 pounds less. I’ve changed more than just physically since this time but to be honest I’m really proud of myself. In 2016 I was 205 pounds and as of today I’ve lost 70. I think I my current weight(135)is pretty good for 5’ 10”. I’ve gone from size 15 jeans to size 2/4, I’ve worked so hard and now I can see it. 2 years later I’m so different in ways I never would have guessed. Thank you to everyone who supported me but more than that thanks to everyone who poked fun at me because without you guys I would have never made this change for myself. It was lost healthily and one of the most difficult things. I’m still not 100% confident but I feel so much better and I’m fine with slightly bragging about this. No matter what others say, only you can define your worth. So from a 1X to a small, from 2016 to 2018, and from my life then to my life now, if there’s one thing I learned is that hard work will eventually pay off. VEGETABLES by @jvangfitness We all know that one person who hates veggies (or maybe it's you who hates veggies). - There's a new study out that states it may be your genetics that determine your veggie hate. - The study states that some of us are born with 2 copies of "PAV", which creates a sensitivity to bitterness - like those from the cruciferous family. There are also some of us that are called "non-tasters" (2 copies of "AVI"), which means you are not sensitive to bitterness. The rest of us contain both PAV and AVI, which means veggies are tolerable. - If you fall under the camp of bitterness sensitive, now, this doesn't mean you should avoid eating veggies. As we know, there are many benefits coming from veggies. - Here's my recommendation to increase your veggie intake if you hate them: 1. Start slow! Find 1-2 veggies that you can tolerate. Stick with it until you are ready to add a new veggie into your diet. Even if it’s something like canned green beans. At least it’s a start. 2. Try different cooking methods like sauté, bake, steam, boil, raw, etc. Find the best option for you and slowly add new ways to cook your veggies! 3. Season your veggies. With the sweetness of butternut squash and pomegranate, the crunch of pecans, and the tang of apple cider vinegar, this easy salad gets better the longer you let it sit in the fridge. This Gingerbread Brownie “Snickers” is everything you didn’t know your Monday needed! Seriously one of the best things that’s ever come out of my kitchen is my freezer almond joys, but DANG I just upgraded that recipe with @baseculture’s almond butter brownie and their gingerbread almond butter to make some brownie snickers bars! 🤤 This recipe is seriously so simple and made with ALL real food ingredients, so if you’re looking for a reason to open your freezer as temperatures drop, THIS IS IT! You can find the Base Culture brownies in the freezer aisle of your grocery store, so open that freezer first, then run over to the nut butter aisle and grab some of this gingerbread almond butter, then get back to your kitchen and make this magic happen! Hope you all have a great Monday! ✨ #partner #mybaseculture Base Layer: Mix in a bowl 1 cup oat flour ⅓ cup coconut oil ¼ cup coconut flakes Middle layer: Combine 2 @baseculture almond butter brownies in a food processor Top Layer: Mix together ⅓ cup @baseculture gingerbread almond butter and about 1 tbsp coconut oil Directions: Combine ingredients for base layer in a bowl, then press into a pan, place in freezer for about 25 mins or until mostly frozen. While base layer is freezing, pulse the brownies in a food processor. Top frozen base layer with brownies, place back into freezer for about 10 minutes. Top with gingerbread almond butter layer and freeze for about 20 minutes or until mostly solid. Take out of freezer, allow to defrost, and enjoy! 💛
