Autumn wouldn't be Autumn without squash on a plate. So I just wanted to talk to you about different recipe ideas and would love it if you share any thoughts with me too. 🙂
I mostly use Hokkaido or butternut squash.
You can cook it but for me the best is baked squash, because it gives extra flavor this way, especially if you make it caramelize a bit. 😋
➡️ I mostly just cut it in half, remove the seeds, I don't peel the skin, and just cut it to smaller pieces.
Then I add little olive oil, toss it and if I will use it in a savory dish I add salt too, otherwise not.
I bake it on baking paper for as long as it takes for it to become soft, usually round 40 minutes. 🙃
Then I cool it and use it. Sometimes I just use it in pieces, or I slice it even to smaller ones.
If I am making a soup, I just add it to broth and then blend.
➡️ But I mostly make it into puree once it cools down.
Just goes in my kitchen blender and I toss it a little until it's smooth. It can even wait for a couple of days in the fridge this way.

Squash roll cake (🔜I will post a recipe for this tomorrow, don't miss it), muffins, brownies, rice pudding, cheesecake, jam, pancakes, ...
And savory: risotto, salads, soups, dumplings, pasta sauce, gnocchi, bread, ...
