HONEY BALSAMIC SHREDDED @instantpotofficial CHICKEN w/ roasted broccoli and sweet potatoes AKA your new favorite lunch!

Here’s what you need:
✨ 1.25-1.5 lbs chicken breast, frozen or thawed, whole
✨ 1 or 2 bunch(es) organic broccoli, cleaned and chopped
✨ 3 medium sweet potatoes, peeled and cubed
✨ Olive oil
✨ Balsamic vinegar
✨ Seasonings: @themeltingpotrestaurants garlic wine, cumin, paprika, salt and pepper
METHOD: Preheat oven to 400F — toss broccoli is a tiny bit of olive oil and season with salt and pepper. Roast 25 minutes, flipping halfway. Toss sweet potatoes in olive oil, salt, pepper, cumin and paprika. Roast 15 minutes or until soft. For chicken, turn on @instantpotofficial to poultry setting for 30 minutes if chicken is frozen and 15 minutes if thawed. Pour in 1/2 cup balsamic vinegar, 1.5T honey, 1t of @themeltingpotrestaurants garlic wine seasoning, salt and pepper to taste. When complete, release pressure and sauté for 5 minutes with extra 1/2T of honey until leftover liquid is absorbed.
Made all of this simultaneously and prepped lunch for the week in just 30 minutes with barely any cleanup or headache, just portion in Tupperware for lunch on-the-go. 😍 Served the above with some avo for healthy fats and made the most delicious lunch ever!
