🍓 Snack Hack 🥕 How many parents out there hear “I’m hungry!” 9 million times a day??? My answer is usually “eat some fruit!” Their answer: “😤” . A few weeks ago I started pre-washing and cutting fruit and veggies and putting them in deli containers (you can also use mason jars) and placing them on the shelves on the refrigerator door. (The paper towels are to reduce the moisture so they last longer). This has been life changing for 2 reasons. 1. They open the fridge and immediately see the ready to eat snacks. 2. When I’m packing lunches, it’s one less step for me especially when I’m 😴 A couple other tricks of the trade: 1. Pre-pack dips like hummus, ranch, and guacamole into little soufflé cups. 1. Have a large snack bowl that they pick from with granola bars, bags of organic chips, apple sauce, and whatever treats you need to have on hand to keep them at bay. P.S. this is also good for adults 😜 Good luck peeps! #healthykids

Excuse the haze but it was piping hot. The nights are getting shorter, the weather is getting colder (at least in the northern hemisphere), and I just invested in a slow cooker. As a #disabledfoodie I want to try and take the hassle out of cooking and keep my weight-loss plan going. I’m cutting out processed foods and trying to cook more at home which means I’m having to improvise in the kitchen. You all know I made my start on this journey with #SnackHacks by @officialclaudiachristian and @onthemarkphotos7. Well I’m still using that recipe book, but I’m also embarking on some other horizons too. Tonight I made my mum’s Slow Cooker Root Veg Soup. It’s really easy and with the help of a vegetable chopper is simple even for a foodie like me with #hEDS. My slow cooker is 1.5 litres. So you may need to adjust accordingly. - 2 large carrots - 2/3 large parsnips - 5/6 small shallots - tsp dried rosemary - tsp dried thyme - 2 veg stock cubes (adjust to taste) - approx 750 mls of boiled water, you want to leave about an inch at the top of the slow cooker for breathing space. - salt and pepper to taste should you desire Chop the veg, throw it all in the slow cooker. Stir, put the lid on, set to high, and walk away for 2.5 hours. Check the veg is cooked through, then blend either in a blender or with a hand blender. SWEET CINNAMON CUCUMBER BITES... @bemilygeorge inspired 💕 - - - MACROS: Swipe! - - - I used 145g of raw cucumber sliced thin, added ground cinnamon and almost a full pack of sugar twin. You could use 1/2 pack and it would still be sweet! I find a lot of times after eating a meal or something “savoury” I really want something sweet. Whisk eggs with garlic, oregano, salt and pepper⠀⠀ 2. Dice bacon and pepperoni slices⠀⠀ 3. Slice green pepper, red onion, olives and mushrooms thin⠀⠀ 4. Someone once said to me "having boys is just like having puppies... you just need to feed them, run them around and let them sleep" and I actually couldn't agree more! Jet and his buddies literally never stop, unless there's food or sleep and during the school holidays food in particular just seems to disappear in a second so I get prepared with things I can make in advance and they can grab for themselves from the fridge / bench - smoothies, muffins, cut fruit and veg with a dip hinting near by in the fridge for the veg, yoghurt pots, crackers, cookies you know the drill. Our smoothies like these are filled with frozen berries, milk (dairy or non), hemp seeds, yoghurt (coyo or greek), cinnamon, ice cubes, oats, banana, vanilla, frozen zucchini or greens if it's a green number (so much spinach in our garden for this!), chia seeds, peanut/almond or cashew butter. 😋Sounds like a mouthful, takes 2 seconds though as you know with ole faithful blender on the ready and then I'm not trying to solve hunger as we go. I made a promise today that I’m going to work towards a zero processed food diet. Now I’m not going to say I will succeed, but I am going to make the effort. So with that in mind, and inspired by @officialclaudiachristian and @onthemarkphotos7’s #SnackHacks and their ability to make really simple but tasty recipes out of a handful of ingredients, I threw open the cupboard, the freezer and the fridge and made a #risotto that I wasn’t sure would work. But it did. Risotto rice, two veg stock cubes, a can of kidney beans, frozen leeks, frozen broccoli, and water thrown in the pot, bring to the boil and let it simmer. Once it’s reduced down, throw in some grated cheese of whichever variety you have in, and voila. It may look like a plate full of chlorophyll with kidney beans, but damn it was so tasty I had a small second portion. And there’s enough left to have tomorrow or later in the week too. The reason for the second picture is this... I know from the picture that this day five years ago was a work day. I know that I was in a whole other place and counting down the days, yes literally the days until April 2015 and meeting the person who has literally helped me turn my life around. So much has changed since then. And I can tell you now that I wouldn’t have, couldn’t have, imagined myself still alive, writing daily, eating healthier, cooking from scratch despite the pain, being #alcoholfree #nicotinefree and living a life that’s #creative, which has #trust and #unconditionallove in it. #foodie #disabledfoodie #healthyfood #vegetarianrecipe #goodeating #greenveg #greenrice

READ THIS LIFE CHANGING HEALTH HACK!🗣 Today was nutrition school day and as you guys know I study to become a weight loss coach. But I still am a health addict so for myself it is never about counting calories, its about being as healthy as I can to live a long happy and healthy life. When I have days with processed foods like burgers, pizza or even ice tea or coca cola I dont feel good after, I usually feel stressed and restless. If I have a day full of nutritious home made foods I feel so much better! My mind gets more clear and I even feel that my skin is more balanced and less greasy or red. So please guys think again before you buy yourself a coke or processed iced tea, fill up your water bottle or make your own iced tea (wich is super easy and I will make a post with recipe soon!). You will only feel better right in that moment when you are sipping that coca cola or processed iced tea and after an hour (or even less) your blod sugar levels will fall and you will get this stressed or sad feeling in your mind. My teacher told me that one of the main reasons of over weight is due to people not drinking water and just drinking lattes with sirup or coca colas etc. So hacks for today drink the best drink there is! —>💦💧 . Lets EAT ⁣ ⁣ haven’t grocery shopped or meal prepped in a hot sec so I went to the grocery store before work today to grab some things for lunch and this is what we got:⁣ 🍅 tomato 🥒 cucumber 🥑 1/4 avo 💪🏼 sesame ginger tofu 🍇 and a not pictured bag of grapes. ⁣ ⁣ seasoned w/ the @oldbay_seasoning that lives on my desk bc #Duh. ⁣ ⁣ I just wanted to say it doesn’t need to be complicated. My half awake 7 AM brain does not have many thoughts but it can handle “fruit, veggie, protein, fat”⁣ ⁣ I’ve been following a meal plan for so long that it’s really just second nature now. And I use it as a guideline rather than a law. Bc yeah yeah cookies and beer are also good. ⁣ ⁣ #ChafingGlory

AFTER SCHOOL SNACKS It's all about making food fun, display food so it's inviting to eat and offer a variety of different choices filling an element of your child's 5 a Day. SNACK O’CLOCK 🍓😼 . I will admit, my snack game has been pretty weak lately. But that all changed over the weekend 🤤 . The clock struck 10:14am and boy let me tell you was I peckish! So, here you have my snack + a strong fkn coffee (which is a non-negotiable ☕️) for me 🧠💦 . Throw a piece of Burgen in the toaster, wait for it to cook (try not to burn it....unfortunately spoken from experience) add some natural peanut butter + top with strawberries- happy days 😍 especially with the sweetness and price of strawbs at the moment . Time saving tip Thursday! 🕑👆 Don’t always have the time to get veggies into your diet? Life is busy and most of us could use a #timehack to make sure we’re not compromising our health and nutrition. Try cutting some of your favourite veggies ahead of time and store them in an airtight glass container. Cover with some water to keep them staying fresh and hydrated. Make sure you change the water every few days to keep them fresh. Cucumbers, carrots, celery sticks, fennel and bell peppers are some of our family favourites. 🥕🥦🥒 During snack time, pair it up with your favourite hummus for some added protein. I HAVE A FEAR OF BUYING FRESH VEGGIES ... 😱🍆😱🥑😱🥦😱🥬😱🥒😱🌶😱🌽😱🥕 ... I had a really weird dream when I was a little kid about a giant evil carrot walking down the road in front of our house. But I don’t think that’s the reason. I think it’s because my vegetable drawer is where all good produce goes to die. ... BUT. Jen just had a thought. What if I reminded myself that carrots can be grated and put in muffins like I’m making right now as part of our breakfast for dinner? What if I reminded myself that my husband loves sautéed zucchini but it is also wonderful in breads and pancakes?
